Description

A vibrant and healthy salad made with chickpeas, cherry tomatoes, cucumber, red onion, and feta, all tossed in a zesty olive oil and vinegar dressing.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 shallot, minced
  • Salt and pepper to taste

Instructions

  1. Combine the rinsed chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, parsley, and crumbled feta cheese in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, minced shallot, and a pinch of salt and pepper in a small bowl.
  3. Pour the dressing over the salad and toss gently to coat evenly.
  4. Serve immediately or refrigerate for up to three days.
