Delightful Air Fryer Peach Hand Pies with a crispy crust and sweet peach filling, bringing the essence of summer into every bite.

- 1 package of pie crusts (or homemade pie crust)
- 2–3 ripe peaches, peeled and diced
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- Flour (for dusting)
Instructions
- Prepare the peach filling: In a mixing bowl, combine the diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Stir well and set aside.
- Roll out the pie crust: Dust your workspace lightly with flour. Roll out the pie crust to about 1/8 inch thick and cut it into circles, about 4 inches in diameter.
- Fill the pies: Place a spoonful of the peach filling onto one half of each circle, ensuring not to overfill.
- Seal the edges: Fold the circle over to create a half-moon shape. Press the edges together gently, sealing them with a fork.
- Egg wash: Brush the tops of each hand pie with the beaten egg for a golden finish.
- Preheat the air fryer: Set it to 350°F (175°C) while you arrange the hand pies.
- Air fry your creations: Place the hand pies in the air fryer basket in a single layer. Cook for 10-12 minutes until golden brown.
- Cool and serve: Let your hand pies cool slightly before serving warm.
Notes
For an even crispier crust, use parchment paper in the air fryer. You can prepare the filling a day in advance.
