Description

Indulge in crispy air fryer potato skins filled with smoky bacon, melty cheese, and fresh green onions. Perfect as a snack or appetizer for any gathering!


Ingredients

Scale
  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and dry the potatoes, then pierce them all over with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Place the potatoes in the air fryer and cook for 25-30 minutes until tender.
  5. Remove the potatoes, let cool slightly, then cut in half lengthwise and scoop out some of the flesh.
  6. Brush the insides of the skins with more olive oil.
  7. Return the hollowed skins to the air fryer and cook for another 5-7 minutes.
  8. Fill each skin with cheese, bacon, and any additional toppings.
  9. Return to the air fryer for another 3-5 minutes until cheese is melted.
  10. Serve warm, topped with sour cream and green onions.

Notes

You can refrigerate prepared potato skins (up to step 6) and add toppings before the final cooking phase.
