Description
Indulge in crispy air fryer potato skins filled with smoky bacon, melty cheese, and fresh green onions. Perfect as a snack or appetizer for any gathering!

- 4 medium russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 2 green onions, chopped
Instructions
- Preheat your air fryer to 400°F (200°C).
- Wash and dry the potatoes, then pierce them all over with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Place the potatoes in the air fryer and cook for 25-30 minutes until tender.
- Remove the potatoes, let cool slightly, then cut in half lengthwise and scoop out some of the flesh.
- Brush the insides of the skins with more olive oil.
- Return the hollowed skins to the air fryer and cook for another 5-7 minutes.
- Fill each skin with cheese, bacon, and any additional toppings.
- Return to the air fryer for another 3-5 minutes until cheese is melted.
- Serve warm, topped with sour cream and green onions.
Notes
You can refrigerate prepared potato skins (up to step 6) and add toppings before the final cooking phase.
