Description

A vibrant and refreshing salad featuring creamy avocados and sweet corn, perfect for summer gatherings.


Ingredients

  • 2 ripe avocados, diced
  • 2 cups corn (fresh or canned)
  • 1 jalapeño, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup toasted pumpkin seeds
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the diced avocados, sweet corn, jalapeño, cilantro, parsley, and toasted pumpkin seeds in a large mixing bowl.
  2. Whisk together the lime juice, olive oil, and a generous pinch of salt and pepper in a small bowl.
  3. Pour the dressing over the salad and gently toss everything together.
  4. Serve immediately or chill in the fridge for at least 30 minutes before serving.

Notes

For best results, add avocados right before serving to prevent browning.
