Description

A creamy and flavorful Bacon Loaded Potato Salad infused with crispy bacon and fresh vegetables, perfect for gatherings.


Ingredients

  • 2 pounds potatoes, diced
  • 8 slices of bacon, cooked and crumbled
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1/2 cup green onions, chopped
  • 1/2 cup celery, diced
  • 1/2 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 10-15 minutes. Drain and let cool.
  2. Prepare the dressing by combining mayonnaise, sour cream, and Dijon mustard in a large mixing bowl.
  3. Fold the cooled potatoes into the dressing, adding bacon, green onions, celery, and cheddar, mixing until well combined.
  4. Season to taste with salt and pepper.
  5. Chill the salad in the refrigerator for at least 1 hour before serving.
