Ingredients

- 2 pounds potatoes, diced
- 8 slices of bacon, cooked and crumbled
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1/2 cup green onions, chopped
- 1/2 cup celery, diced
- 1/2 cup cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until fork-tender, about 10-15 minutes. Drain and let cool.
- Prepare the dressing by combining mayonnaise, sour cream, and Dijon mustard in a large mixing bowl.
- Fold the cooled potatoes into the dressing, adding bacon, green onions, celery, and cheddar, mixing until well combined.
- Season to taste with salt and pepper.
- Chill the salad in the refrigerator for at least 1 hour before serving.
