- 4 Chicken Thighs
- 1 Cup Rice
- 1 Can Banana Peppers (Sliced)
- 2 Cups Chicken Broth
- 1 Onion (Chopped)
- 1 Cup Shredded Cheese
- Salt and Pepper to Taste
- 1 Tablespoon Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté 1 chopped onion until translucent, about 4-5 minutes.
- Add the 4 chicken thighs to the skillet, cooking until slightly browned on both sides.
- Combine 1 cup of rice, 2 cups of chicken broth, the drained banana peppers, and salt and pepper in a baking dish.
- Nestle the browned chicken thighs on top of the rice mixture.
- Cover the dish tightly with aluminum foil and bake for about 30-40 minutes.
- Remove the foil, sprinkle 1 cup of shredded cheese over the top, and return it to the oven uncovered for an additional 10-15 minutes.
- Let it rest for a few minutes before serving.
Notes
Prepare the casserole in advance and store it in the fridge for up to one day before baking. Customize with extra veggies or spices as desired.
