- 3 ripe bananas, mashed
- 1 cup fresh strawberries, chopped
- 1/2 cup sugar
- 1/3 cup melted butter
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease your loaf pan generously.
- Mash the ripe bananas in a large bowl until creamy.
- Combine melted butter with the mashed bananas.
- Add sugar, beaten egg, and vanilla extract; mix until smooth.
- Incorporate baking soda and salt, stirring just until combined.
- Add flour and gently fold in until no dry flour remains.
- Fold in the chopped strawberries carefully.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, checking doneness with a toothpick.
- Prepare the glaze by mixing powdered sugar and milk until smooth and drizzle over the cooled bread.
- Slice and serve warm.
Notes
You can prepare the batter in advance and store in the fridge for up to a day. Substitute fruits for different flavors.
