Description

A delightful loaf combining ripe bananas and fresh strawberries for a sweet and moist treat.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan generously.
  2. Mash the ripe bananas in a large bowl until creamy.
  3. Combine melted butter with the mashed bananas.
  4. Add sugar, beaten egg, and vanilla extract; mix until smooth.
  5. Incorporate baking soda and salt, stirring just until combined.
  6. Add flour and gently fold in until no dry flour remains.
  7. Fold in the chopped strawberries carefully.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, checking doneness with a toothpick.
  10. Prepare the glaze by mixing powdered sugar and milk until smooth and drizzle over the cooled bread.
  11. Slice and serve warm.

Notes

You can prepare the batter in advance and store in the fridge for up to a day. Substitute fruits for different flavors.
