Description

A delightful quick bread featuring ripe bananas and fresh strawberries for a moist and flavorful treat.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth, then mix in the melted butter.
  3. Add the sugar, beaten egg, and vanilla extract, stirring until well-blended.
  4. Sprinkle in the baking soda and salt, stirring carefully to incorporate.
  5. Fold in the all-purpose flour using a spatula, stopping as soon as the mixture comes together.
  6. Gently fold in the chopped strawberries, ensuring even distribution.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for about 60 minutes, testing for doneness with a toothpick.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
  10. Mix powdered sugar and milk to create a glaze and drizzle it over the cooled bread.
