- 1 pound ground beef
- 1 can black beans, rinsed and drained
- 1 cup cooked rice
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Tortilla chips or tortillas (optional for layering)
- Sour cream and salsa for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat until rich and golden. Drain any excess fat.
- Add the black beans, cooked rice, diced tomatoes, taco seasoning, salt, and pepper to the skillet. Stir to combine and heat through.
- Layer half of the beef mixture in a greased casserole dish, followed by half of the cheese. Optionally, layer in tortilla chips or soft tortillas.
- Repeat with the remaining beef mixture and cheese.
- Bake for 20-25 minutes or until the cheese is golden brown and bubbly.
- Serve hot with sour cream and salsa on the side.
Notes
Letting the casserole cool for a few minutes before serving helps it set for easier slicing.
