Description

A comforting Beef Burrito Casserole combining seasoned ground beef, black beans, and zesty taco flavors topped with melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, rinsed and drained
  • 1 cup cooked rice
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Tortilla chips or tortillas (optional for layering)
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat until rich and golden. Drain any excess fat.
  3. Add the black beans, cooked rice, diced tomatoes, taco seasoning, salt, and pepper to the skillet. Stir to combine and heat through.
  4. Layer half of the beef mixture in a greased casserole dish, followed by half of the cheese. Optionally, layer in tortilla chips or soft tortillas.
  5. Repeat with the remaining beef mixture and cheese.
  6. Bake for 20-25 minutes or until the cheese is golden brown and bubbly.
  7. Serve hot with sour cream and salsa on the side.

Notes

Letting the casserole cool for a few minutes before serving helps it set for easier slicing.
