Description

A comforting Beef Burrito Casserole that layers tender beef, black beans, and cheese for a cozy dinner experience.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 cups shredded cheese
  • 6 flour tortillas, cut into triangles
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef over medium heat until browned and drain fat.
  3. Stir in the black beans, corn, salsa, chili powder, cumin, salt, and pepper, and cook for 2-3 minutes.
  4. Layer half of the tortilla triangles in a greased 9×13 inch baking dish.
  5. Spread half of the beef mixture over the tortillas and top with half of the cheese.
  6. Repeat the layers with the remaining tortilla triangles, beef mixture, and cheese.
  7. Cover with foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes.
  9. Cool slightly before serving.

Notes

Make-ahead tips: Prepare the casserole a day in advance and store it unbaked. Cook in the oven when ready to serve.
