Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 2 cups shredded cheese
- 6 flour tortillas, cut into triangles
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef over medium heat until browned and drain fat.
- Stir in the black beans, corn, salsa, chili powder, cumin, salt, and pepper, and cook for 2-3 minutes.
- Layer half of the tortilla triangles in a greased 9×13 inch baking dish.
- Spread half of the beef mixture over the tortillas and top with half of the cheese.
- Repeat the layers with the remaining tortilla triangles, beef mixture, and cheese.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes.
- Cool slightly before serving.
Notes
Make-ahead tips: Prepare the casserole a day in advance and store it unbaked. Cook in the oven when ready to serve.
