- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup mixed berries (blueberries, raspberries, etc.)
- 1/2 cup cream cheese, softened
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Combine the melted butter, eggs, vanilla extract, and milk in another bowl, whisking until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the mixed berries carefully.
- Add a spoonful of muffin batter to the muffin tin, place a dollop of cream cheese in the center, and top with more batter.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool slightly before serving and enjoy warm.
Notes
Feel free to swap out the berries based on what’s in season. Consider adding lemon zest or nuts for additional flavor and texture.
