Description

A comforting and flavorful Chicken Tikka Masala that combines tender marinated chicken with a rich, creamy coconut sauce, perfect for family gatherings or a cozy night in.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine yogurt, lemon juice, minced garlic, ginger, and spices (garam masala, cumin, paprika, turmeric). Add the cubed chicken, ensuring each piece is well-coated. Allow it to marinate for at least one hour, preferably overnight in the fridge, for maximum flavor.
  2. Sauté the Aromatics: Heat the vegetable oil in a non-stick skillet over medium heat. Once hot, add the chopped onions, sautéing until they turn golden brown, about 5-7 minutes.
  3. Cook the Chicken: Introduce the marinated chicken to the pan, allowing the pieces to brown slightly without cooking completely, about 5-8 minutes.
  4. Simmer the Sauce: Pour in the coconut milk, stirring well to blend everything. Allow it to come to a gentle simmer, reducing the heat as necessary, and cover. Let it simmer for approximately 20 minutes until the sauce thickens and the chicken is tender.
  5. Season and Garnish: Adjust salt to taste before serving. To finish, sprinkle with freshly chopped cilantro for that vibrant touch.

Notes

Marinate the chicken a day in advance for deeper flavor. This dish can also be cooked in an air fryer for a different texture.
