Description

A delicious dish featuring blackened salmon fillets with creamy avocado ranch served over coconut rice.


Ingredients

Scale
  • 4 salmon fillets
  • 2 tablespoons blackening seasoning
  • 1 ripe avocado
  • 1/2 cup sour cream
  • 1/4 cup buttermilk
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2 cups cooked coconut rice
  • Fresh cilantro for garnish

Instructions

  1. Preheat your cast iron skillet over medium-high heat until it’s smoking hot.
  2. Season the salmon fillets generously with blackening seasoning on both sides.
  3. Add a couple of tablespoons of oil to the skillet and place the salmon fillets in the pan.
  4. Cook for about 4-5 minutes on each side until blackened and cooked to your preference.
  5. Combine avocado, sour cream, buttermilk, lime juice, salt, and pepper in a blender and blend until smooth.
  6. Serve the salmon atop coconut rice and drizzle with avocado ranch dressing, garnishing with fresh cilantro.

Notes

Make-ahead: Prepare the avocado ranch dressing the day before. Cooking alternative: Try air frying or baking the salmon.
