Description

A summery pasta dish combining classic BLT flavors with rotini, mayonnaise, cherry tomatoes, and crispy bacon for a refreshing salad.


Ingredients

  • 8 ounces rotini pasta
  • 6 strips of bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the rotini pasta according to package instructions until al dente. Drain and rinse it under cold water, then set it aside to cool completely.
  2. In a large mixing bowl, combine the cooled pasta, crumbled bacon, halved cherry tomatoes, chopped romaine lettuce, and diced red onion. Gently toss everything together, allowing the ingredients to mingle.
  3. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until the mixture is smooth and creamy.
  4. Pour the dressing over the pasta salad, and toss gently to ensure every morsel is enveloped in that creamy goodness.
  5. For the best flavor, cover your salad and chill it in the refrigerator for at least 30 minutes before serving.
