Description
A summery pasta dish combining classic BLT flavors with rotini, mayonnaise, cherry tomatoes, and crispy bacon for a refreshing salad.
Ingredients
Scale
- 8 ounces rotini pasta
- 6 strips of bacon, cooked and crumbled
- 2 cups cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup red onion, diced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Begin by cooking the rotini pasta according to package instructions until al dente. Drain and rinse it under cold water, then set it aside to cool completely.
- In a large mixing bowl, combine the cooled pasta, crumbled bacon, halved cherry tomatoes, chopped romaine lettuce, and diced red onion. Gently toss everything together, allowing the ingredients to mingle.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until the mixture is smooth and creamy.
- Pour the dressing over the pasta salad, and toss gently to ensure every morsel is enveloped in that creamy goodness.
- For the best flavor, cover your salad and chill it in the refrigerator for at least 30 minutes before serving.
Notes
