A delightful twist on the classic BLT sandwich, this creamy and savory BLT Pasta combines fresh ingredients for a comforting and satisfying dish.

- 8 oz pasta (your choice)
- 6 slices bacon
- 2 cups cherry tomatoes, halved
- 2 cups lettuce, chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta. Fill a large pot with salted water and bring it to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
- Cook the bacon. Heat a skillet over medium heat. Add the bacon strips and cook until crispy, about 6–8 minutes. Once cooked, transfer to a paper towel-lined plate to drain excess grease.
- Sauté the cherry tomatoes. In the same skillet, add the halved cherry tomatoes. Sauté for 2-3 minutes until they soften and mingle with the flavors left in the pan.
- Combine ingredients. In a large mixing bowl, add the cooked pasta, chopped lettuce, sautéed tomatoes, and crumbled bacon.
- Prepare the dressing. In a separate bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth.
- Mix it all together. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Serve. Enjoy immediately for the best texture, or chill the mixture in the fridge for about 30 minutes for a refreshing pasta salad version.
Notes
Make-ahead tip: Prepare a few hours in advance for better flavor melding. For a lighter version, substitute Greek yogurt for mayonnaise.
