Description

A delightful twist on the classic BLT sandwich, this creamy and savory BLT Pasta combines fresh ingredients for a comforting and satisfying dish.


Ingredients

  • 8 oz pasta (your choice)
  • 6 slices bacon
  • 2 cups cherry tomatoes, halved
  • 2 cups lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta. Fill a large pot with salted water and bring it to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  2. Cook the bacon. Heat a skillet over medium heat. Add the bacon strips and cook until crispy, about 6–8 minutes. Once cooked, transfer to a paper towel-lined plate to drain excess grease.
  3. Sauté the cherry tomatoes. In the same skillet, add the halved cherry tomatoes. Sauté for 2-3 minutes until they soften and mingle with the flavors left in the pan.
  4. Combine ingredients. In a large mixing bowl, add the cooked pasta, chopped lettuce, sautéed tomatoes, and crumbled bacon.
  5. Prepare the dressing. In a separate bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth.
  6. Mix it all together. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
  7. Serve. Enjoy immediately for the best texture, or chill the mixture in the fridge for about 30 minutes for a refreshing pasta salad version.

Notes

Make-ahead tip: Prepare a few hours in advance for better flavor melding. For a lighter version, substitute Greek yogurt for mayonnaise.
