Description

Delightful blueberry oatmeal pancakes that combine nutty oats and juicy blueberries for a perfect breakfast treat.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 1 egg (or flaxseed mixture for vegan)
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries (fresh or frozen)
  • Butter or oil for cooking

Instructions

  1. Combine the rolled oats and milk in a large bowl and let sit for 5 minutes.
  2. Whisk together the egg, sugar, baking powder, and salt in a separate bowl until smooth.
  3. Mix the wet ingredients into the oats until well combined, being careful not to overmix.
  4. Fold in the blueberries gently.
  5. Heat a skillet over medium heat and add butter or oil.
  6. Pour scoops of batter onto the skillet, cooking until bubbles form on the surface, then flip and cook until golden brown (about 2-3 minutes per side).
  7. Serve warm with your choice of toppings.

Notes

Make the batter the night before for an easy breakfast. You can also use an air fryer for healthier pancakes.
