Description

Ingredients

  • 4 slices of bread (brioche or challah)
  • 1 cup of blueberries (fresh)
  • 2 large eggs
  • 1/2 cup of milk (full-fat or dairy-free alternative)
  • 1 teaspoon of vanilla extract
  • 1/2 cup of cream cheese
  • 2 tablespoons of sugar
  • Butter (for cooking)
  • Maple syrup (for serving)

Instructions

  1. Combine the cream cheese and sugar in a bowl until smooth.
  2. Spread the cream cheese mixture on two slices of bread, topping with fresh blueberries.
  3. Place the remaining slices on top, forming sandwiches.
  4. Whisk together eggs, milk, and vanilla in another bowl.
  5. Dip each sandwich into the egg mixture, coating both sides.
  6. Heat butter in a skillet over medium heat.
  7. Cook the sandwiches until golden brown, about 3-4 minutes on each side.
  8. Serve warm, drizzled with maple syrup.

Notes

Prepare the cream cheese filling the night before for quicker morning prep. You can also cook in an air fryer at 350°F for a lighter version.
