Instructions
- Cook the sausage in a large skillet over medium heat until browned, breaking apart with a spatula.
- Add the hash browns, stirring occasionally for 5-7 minutes until they crisp up.
- Scramble the eggs in a separate bowl, then pour into the skillet, stirring until fluffy and cooked.
- Roll an egg roll wrapper with a spoonful of filling, folding in the sides and sealing with water.
- Fry the egg rolls in hot oil over medium-high heat, about 4-5 minutes per side until golden brown.
