Description

A rich and creamy Cajun Chicken Pasta dish, bursting with bold flavors and colorful vegetables.


Ingredients

  • 8 oz fettuccine or penne pasta
  • 2 tbsp olive oil
  • 1 lb chicken breast, cubed
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine or penne according to package instructions, ensuring it reaches that perfect al dente stage. Once done, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Give it a minute to warm up before proceeding.
  3. Add the cubed chicken to the skillet and generously sprinkle with Cajun seasoning, salt, and pepper. Cook until the chicken turns golden brown and reaches a safe temperature, about 5-7 minutes.
  4. Toss in the sliced bell peppers and sauté until they soften, about 3-4 minutes.
  5. Pour in the heavy cream and chicken broth. Stir gently to combine, then incorporate the Parmesan cheese, mixing until it’s melted and the sauce thickens slightly.
  6. Add the cooked pasta directly into the sauce, tossing until every piece gets coated in that luscious, creamy goodness.
  7. Finally, garnish with chopped green onions for a fresh finish before serving.

Notes

Keep your pasta slightly undercooked if you plan to heat it again; it will absorb some sauce while reheating.
