- 8 oz fettuccine or penne pasta

- 1 lb chicken breast, cubed
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup bell peppers, sliced
- 1/2 cup green onions, chopped
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine or penne according to package instructions, ensuring it reaches that perfect al dente stage. Once done, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Give it a minute to warm up before proceeding.
- Add the cubed chicken to the skillet and generously sprinkle with Cajun seasoning, salt, and pepper. Cook until the chicken turns golden brown and reaches a safe temperature, about 5-7 minutes.
- Toss in the sliced bell peppers and sauté until they soften, about 3-4 minutes.
- Pour in the heavy cream and chicken broth. Stir gently to combine, then incorporate the Parmesan cheese, mixing until it’s melted and the sauce thickens slightly.
- Add the cooked pasta directly into the sauce, tossing until every piece gets coated in that luscious, creamy goodness.
- Finally, garnish with chopped green onions for a fresh finish before serving.
Notes
Keep your pasta slightly undercooked if you plan to heat it again; it will absorb some sauce while reheating.
