Description

Delicious cookies that combine the creamy texture of cheesecake with a rich caramel filling, all encased in a buttery cookie.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Beat the cream cheese and powdered sugar together until smooth.
  7. Scoop a tablespoon of cookie dough, flatten it slightly, and place a teaspoon of the cream cheese mixture in the center.
  8. Wrap the cookie dough around the filling to form a ball.
  9. Place the cookies on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until golden.
  11. Drizzle with caramel sauce before serving.
