- 4 large russet potatoes
- 1 pound ground beef
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced onions
- 1/2 cup pickles, chopped
- 1 tablespoon ketchup
- 1 tablespoon mustard
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the potatoes with a fork and bake for about 45-60 minutes until fork-tender.
- Cook the ground beef and diced onions in a skillet over medium heat until the beef is browned and the onions are translucent. Season with salt and pepper.
- Remove the potatoes from the oven and let them cool slightly.
- Cut each potato in half lengthwise and scoop out the insides into a mixing bowl.
- Mash the potato insides until smooth, then fold in the beef mixture, cheddar cheese, pickles, ketchup, and mustard.
- Fill each potato half with the cheeseburger mixture, packing it in.
- Heat oil in a deep pan until shimmering (around 350°F/175°C) and carefully fry the filled potato cones until golden brown, about 4-6 minutes.
