Description

Crispy potato shells filled with a savory blend of seasoned ground beef, melted cheddar cheese, and tangy pickles, delivering a delightful comfort food experience.


Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup pickles, chopped
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the potatoes with a fork and bake for about 45-60 minutes until fork-tender.
  3. Cook the ground beef and diced onions in a skillet over medium heat until the beef is browned and the onions are translucent. Season with salt and pepper.
  4. Remove the potatoes from the oven and let them cool slightly.
  5. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl.
  6. Mash the potato insides until smooth, then fold in the beef mixture, cheddar cheese, pickles, ketchup, and mustard.
  7. Fill each potato half with the cheeseburger mixture, packing it in.
  8. Heat oil in a deep pan until shimmering (around 350°F/175°C) and carefully fry the filled potato cones until golden brown, about 4-6 minutes.
  9. Serve hot and enjoy!

Notes

Make-ahead tip: Bake the potatoes a day in advance for convenience. For a healthier alternative, consider air-frying at 375°F (190°C) for about 15-20 minutes.
