- 2 cups orzo pasta
- 1 pound cooked chicken, shredded or cubed
- 2 cups shredded cheese (such as cheddar or mozzarella)
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup mixed vegetables (optional)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Bring water to a boil and cook the orzo until al dente, about 8-10 minutes. Drain and set aside.
- Combine the cooked orzo, shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until thoroughly mixed.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading evenly.
- Top generously with shredded cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
For a seamless dinner, prep the casserole in advance and store it in the refrigerator. Reheat before serving for easy dinner preparation.
