Description

A comforting dish combining seasoned ground beef, colorful bell peppers, and fluffy rice, all topped with creamy melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 cup white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Optional toppings: sour cream, diced tomatoes, avocado

Instructions

  1. Brown the beef: Heat a large skillet over medium heat. Add the ground beef, breaking it apart until browned (about 5–7 minutes). Drain excess fat.
  2. Sauté the vegetables: Add diced onion and bell pepper, cooking until the onion is translucent (about 3–4 minutes).
  3. Season it up: Sprinkle in the taco seasoning and stir for a minute to toast the spices.
  4. Add rice and beans: Stir in rice, black beans, and corn; pour in beef broth and bring to a boil.
  5. Simmer to perfection: Reduce heat to low, cover, and simmer for 20 minutes.
  6. Melt the cheese: Remove lid and stir in shredded cheese until melted.
  7. Season to taste: Adjust seasoning with salt and pepper as necessary.
  8. Serve and enjoy: Serve in bowls topped with optional ingredients.
