- 1 cup white rice
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, diced
- 1 onion, diced
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Optional toppings: sour cream, diced tomatoes, avocado
Instructions
- Brown the beef: Heat a large skillet over medium heat. Add the ground beef, breaking it apart until browned (about 5–7 minutes). Drain excess fat.
- Sauté the vegetables: Add diced onion and bell pepper, cooking until the onion is translucent (about 3–4 minutes).
- Season it up: Sprinkle in the taco seasoning and stir for a minute to toast the spices.
- Add rice and beans: Stir in rice, black beans, and corn; pour in beef broth and bring to a boil.
- Simmer to perfection: Reduce heat to low, cover, and simmer for 20 minutes.
- Melt the cheese: Remove lid and stir in shredded cheese until melted.
- Season to taste: Adjust seasoning with salt and pepper as necessary.
- Serve and enjoy: Serve in bowls topped with optional ingredients.
