Description

Fluffy and moist Cherry Cobbler Muffins filled with tart cherries and a hint of vanilla, perfect for brightening mornings or enjoyed as a delightful treat.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by lining each cup with paper liners.
  3. Mix dry ingredients in a large bowl: 1 cup flour, 1 cup sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  4. Combine wet ingredients in a separate bowl: 1/2 cup melted butter, 1 large egg, 1/2 cup milk, and 1 teaspoon vanilla extract.
  5. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  6. Fold in the cherries, ensuring they are evenly distributed.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Cool slightly in the tin before transferring to a wire rack.
