- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cooked rice
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips (for topping)
- Fresh cilantro (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the ingredients in a large mixing bowl: shredded chicken, black beans, corn, rice, salsa, cumin, chili powder, salt, and pepper.
- Layer half of the mixture into a greased casserole dish.
- Sprinkle half of the shredded cheese on top.
- Finish layering with the remaining chicken mixture and top it with the rest of the cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Set aside to cool for a few minutes before serving.
- Serve topped with crushed tortilla chips and fresh cilantro.
