Description

A warm, hearty casserole combining tender chicken, creamy cheese, beans, corn, and spices, all enveloped in a golden-brown crust.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips (for topping)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the ingredients in a large mixing bowl: shredded chicken, black beans, corn, rice, salsa, cumin, chili powder, salt, and pepper.
  3. Layer half of the mixture into a greased casserole dish.
  4. Sprinkle half of the shredded cheese on top.
  5. Finish layering with the remaining chicken mixture and top it with the rest of the cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Set aside to cool for a few minutes before serving.
  8. Serve topped with crushed tortilla chips and fresh cilantro.

Notes
