A delicious Chicken Milanese featuring crispy breadcrumbs, tender chicken, and a fresh salad.

- 2 chicken breasts
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs
- Salt and pepper to taste
- Vegetable oil for frying
- Lemon wedges

- Olive oil (for dressing)
- Vinegar (for dressing)
Instructions
- Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Gently pound with a meat mallet to an even thickness of about half an inch. Season generously with salt and pepper on both sides.
- Set up a breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In the third, add the breadcrumbs.
- Bread the chicken: Dredge each breast in the flour, then dip into the eggs, and press into the breadcrumbs until evenly coated.
- Fry the chicken: Heat about 1/2 inch of vegetable oil in a heavy skillet over medium heat. Fry each chicken breast for about 4 minutes per side or until golden brown and cooked through.
- Make the salad: Combine mixed greens, halved cherry tomatoes, and sliced cucumber in a bowl. Drizzle with olive oil and vinegar, then toss gently.
- Serve: Plate the crispy chicken alongside the salad, garnishing with lemon wedges.
Notes
Feel free to substitute chicken thighs for a richer taste. You can also use gluten-free breadcrumbs to suit dietary needs.
