- 1 pound chicken sausage
- 1 cup orzo pasta
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach
- 2 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken sausage, breaking it apart, and cook until browned, about 5–7 minutes.
- Stir in the diced bell pepper and zucchini, cooking until softened, approximately 5 minutes.
- Pour in the orzo and chicken broth, bringing it to a gentle simmer.
- Cook for about 10–12 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.
- Fold in the fresh spinach until wilted.
- Season with salt and pepper to taste.
- Serve hot drizzled with balsamic glaze and garnished with fresh basil.
