Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup bell peppers, diced
  • 1 cup zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Balsamic glaze for drizzling

Instructions

  1. Heat the pan: In a large skillet over medium heat, add the olive oil. Allow it to shimmer, signaling it’s ready for the ingredients.
  2. Sauté aromatics: Toss in the chopped onion and minced garlic. Sauté until the onion becomes translucent, around 3-4 minutes.
  3. Brown the sausage: Add the chicken sausage to the skillet, breaking it apart with your spatula. Cook until it’s nicely browned, about 5-7 minutes.
  4. Incorporate vegetables: Stir in the diced bell peppers and zucchini. Cook for an additional 5 minutes.
  5. Add orzo and broth: Sprinkle in the orzo, followed by the chicken broth. Bring the mixture to a boil.
  6. Simmer: Once boiling, reduce the heat to simmer and cover the skillet. Let it cook until the orzo is tender and absorbs most of the broth, approximately 10-12 minutes.
  7. Finish with tomatoes: Stir in the halved cherry tomatoes and season generously with salt and pepper.
  8. Serve and garnish: Scoop portions onto plates, finishing with a drizzle of balsamic glaze and a sprinkle of fresh basil.

Notes

Feel free to substitute chicken sausage with turkey sausage or plant-based alternatives for a lighter version. Adjust the broth depending on how creamy you prefer your orzo.
