- 4 Chicken Sausages, sliced
- 2 Zucchini, chopped
- 2 Tomatoes, diced
- 8 oz Pasta (fusilli, penne, or spaghetti)
- 2 tbsp Extra Virgin Olive Oil
- 3 cloves Garlic, minced
- Salt, to taste
- Black Pepper, to taste
- Parmesan Cheese (optional), for serving
Instructions
- Cook the pasta according to package instructions in a large pot of salted water. Once al dente, drain it and set aside.
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the minced garlic to the skillet, stirring until fragrant (about 30 seconds).
- Slice the chicken sausages into bite-sized rounds and add them to the skillet. Cook until golden, about 5-7 minutes.
- Toss in the chopped zucchini and diced tomatoes. Season with salt and pepper, and let simmer for 5-10 minutes.
- Add the drained pasta to the skillet, tossing to combine. If dry, drizzle in more olive oil.
- Serve hot, garnished with Parmesan cheese if desired.
