Description

A comforting and vibrant dish featuring juicy chicken sausages, tender zucchini, and plump tomatoes intertwined with hearty pasta.


Ingredients

  • 4 Chicken Sausages, sliced
  • 2 Zucchini, chopped
  • 2 Tomatoes, diced
  • 8 oz Pasta (fusilli, penne, or spaghetti)
  • 2 tbsp Extra Virgin Olive Oil
  • 3 cloves Garlic, minced
  • Salt, to taste
  • Black Pepper, to taste
  • Parmesan Cheese (optional), for serving

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted water. Once al dente, drain it and set aside.
  2. Heat the olive oil in a large skillet over medium heat until shimmering.
  3. Add the minced garlic to the skillet, stirring until fragrant (about 30 seconds).
  4. Slice the chicken sausages into bite-sized rounds and add them to the skillet. Cook until golden, about 5-7 minutes.
  5. Toss in the chopped zucchini and diced tomatoes. Season with salt and pepper, and let simmer for 5-10 minutes.
  6. Add the drained pasta to the skillet, tossing to combine. If dry, drizzle in more olive oil.
  7. Serve hot, garnished with Parmesan cheese if desired.

Notes

Make-ahead: Pre-cook sausages and chop vegetables to save time. Customize with different vegetables or add spices for a kick.
