Description

Delight in the vibrant flavors of grilled peaches and tofu marinated in a zesty chili-lime sauce, perfect for summer gatherings.


Ingredients

  • 2 peaches, pitted and cut into chunks
  • 14 ounces firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons sesame seeds
  • Skewers (wooden or metal)

Instructions

  1. Whisk together olive oil, lime juice, chili powder, and salt in a large mixing bowl to create a marinade.
  2. Add the pressed tofu and peach chunks, gently tossing to coat. Let sit for 15-30 minutes.
  3. Preheat your grill or grill pan over medium heat.
  4. Thread the tofu and peach chunks onto skewers, alternating for presentation.
  5. Grill the skewers for about 10 minutes, turning occasionally until crispy and marked.
  6. Warm honey or maple syrup with sesame seeds in a small saucepan, then drizzle over skewers before serving.

Notes

For maximum flavor, marinate the tofu and peach chunks in advance. Experiment with different vegetables for added color.
