Description

A delightful coffee cake infused with rich chocolate and a buttery crumble topping, perfect for breakfast or as an afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 3/4 cup plain Greek yogurt
  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons butter (for crumble topping)
  • 1/2 tablespoon ground cinnamon
  • 1/2 cup flour (for crumble topping)
  • 1/2 cup light brown sugar (for crumble topping)
  • 1/4 cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9-inch baking pan with non-stick spray.
  2. Whisk together 2 cups of flour, 2 teaspoons of baking powder, and 1 teaspoon of salt in a large mixing bowl.
  3. Beat 1 cup of sugar and 1/2 cup of softened butter until light and fluffy, then add 2 eggs one at a time.
  4. Stir in 1/4 cup of milk and 3/4 cup of yogurt until well combined.
  5. Incorporate the dry mixture into the wet ingredients until smooth, then gently fold in 1 cup of chocolate chips.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Combine 3 tablespoons of butter, 1/2 tablespoon of cinnamon, 1/2 cup of flour, and 1/2 cup of brown sugar for the crumble topping, mixing until crumbly.
  8. Sprinkle the crumble topping and 1/4 cup of chocolate chips over the batter.
  9. Bake for 35-45 minutes or until a toothpick comes out clean.
  10. Cool slightly before serving, best enjoyed warm.

Notes

Make-ahead by refrigerating the batter overnight. Avoid overmixing the batter for a light texture.
