Description

Deliciously moist and rich bars made with zucchini and chocolate chips—perfect for any occasion.


Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup or honey
  • 1/2 cup chocolate chips
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking dish with parchment paper.
  2. Whisk together the grated zucchini, eggs, maple syrup (or honey), and vanilla extract until well combined.
  3. Mix the almond flour, coconut flour, baking soda, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for about 25-30 minutes or until a toothpick comes out clean.
  8. Cool in the dish for 10 minutes before lifting out to cool completely on a wire rack.

Notes

Store in an airtight container for up to 3 days or refrigerate for up to a week. Freeze for up to 2 months.
