Ingredients

- 2 cups grated zucchini
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup maple syrup or honey
- 1/2 cup chocolate chips
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C) and line your baking dish with parchment paper.
- Whisk together the grated zucchini, eggs, maple syrup (or honey), and vanilla extract until well combined.
- Mix the almond flour, coconut flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Cool in the dish for 10 minutes before lifting out to cool completely on a wire rack.
