Description

A moist and decadent bread featuring chocolate chips and grated zucchini, perfect for breakfast or as an afternoon snack.


Ingredients

  • 1 ½ cups grated zucchini
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. Sift together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  4. Add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fold in the chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added crunch, consider adding walnuts or pecans. Adjust baking time if using an air fryer.
