- 1 ½ cups grated zucchini
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Sift together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
- Add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For added crunch, consider adding walnuts or pecans. Adjust baking time if using an air fryer.
