- 1/2 cup mini chocolate chips
- 2 cups all-purpose flour

- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine the all-purpose flour, sugar, baking powder, and salt in a mixing bowl, whisking until well blended.
- Cut in the cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Fold in the grated zucchini and mini chocolate chips, mixing until evenly distributed.
- Pour in the milk and vanilla extract, stirring until just combined; do not overmix.
- Turn the dough onto a floured surface and gently knead it a few times to bring it together.
- Pat the dough into a circle about 1-inch thick and cut into wedges.
- Place the wedges onto the prepared baking sheet with space in between.
- Bake for 15-18 minutes or until golden brown on top.
- Cool slightly before serving.
Notes
For a different flavor, you can substitute zucchini with shredded carrots. Store leftovers in an airtight container for 2-3 days, or freeze for up to a month.
