Description

Freshly made tacos with marinated grilled chicken, cilantro, lime, and your choice of toppings, perfect for summer gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon taco seasoning
  • 4 corn or flour tortillas
  • Toppings: avocado, salsa, shredded cheese, lettuce, pico de gallo

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine chopped cilantro, lime juice, minced garlic, olive oil, and taco seasoning.
  2. Marinate the Chicken: Add chicken breasts to the marinade, toss to coat, and let sit in the fridge for at least 30 minutes.
  3. Preheat the Grill: Heat the grill to medium-high.
  4. Grill the Chicken: Place chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. Let It Rest: Remove chicken from the grill and let it rest for 5 minutes.
  6. Warm the Tortillas: Grill tortillas for 30 seconds on each side until soft.
  7. Assemble the Tacos: Slice the chicken, place it in tortillas, and add your favorite toppings.
  8. Serve and Relish: Enjoy your tacos immediately!

Notes

For deeper flavor, marinate chicken overnight. You can also use other proteins like shrimp or beef.
