- 2 boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon taco seasoning
- 4 corn or flour tortillas
- Toppings: avocado, salsa, shredded cheese, lettuce, pico de gallo
Instructions
- Prepare the Marinade: In a large mixing bowl, combine chopped cilantro, lime juice, minced garlic, olive oil, and taco seasoning.
- Marinate the Chicken: Add chicken breasts to the marinade, toss to coat, and let sit in the fridge for at least 30 minutes.
- Preheat the Grill: Heat the grill to medium-high.
- Grill the Chicken: Place chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F.
- Let It Rest: Remove chicken from the grill and let it rest for 5 minutes.
- Warm the Tortillas: Grill tortillas for 30 seconds on each side until soft.
- Assemble the Tacos: Slice the chicken, place it in tortillas, and add your favorite toppings.
- Serve and Relish: Enjoy your tacos immediately!
Notes
For deeper flavor, marinate chicken overnight. You can also use other proteins like shrimp or beef.
