- 1 cup unsalted butter, softened
- 1 cup granulated sugar (for crust)
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar (for filling)
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease your 9×9 inch baking dish gently.
- Cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add the 2 cups of flour and salt to the butter mixture, mixing until just combined.
- Press the mixture evenly into the bottom of the prepared dish. Bake for about 20 minutes or until lightly golden.
- Whisk together the 4 eggs, the remaining 1 cup of sugar, the lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the warm crust and bake for an additional 20 to 25 minutes until set.
- Cool completely in the dish, then dust with powdered sugar before cutting into squares.
Notes
For cleaner cuts, use a knife dipped in hot water for each cut. Bars taste even better if made a day in advance.
