Description

Delightful classic lemon bars with a buttery shortbread crust and creamy, zesty lemon filling, perfect for sharing.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar (for crust)
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×9 inch baking dish gently.
  2. Cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  3. Add the 2 cups of flour and salt to the butter mixture, mixing until just combined.
  4. Press the mixture evenly into the bottom of the prepared dish. Bake for about 20 minutes or until lightly golden.
  5. Whisk together the 4 eggs, the remaining 1 cup of sugar, the lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling over the warm crust and bake for an additional 20 to 25 minutes until set.
  7. Cool completely in the dish, then dust with powdered sugar before cutting into squares.

Notes

For cleaner cuts, use a knife dipped in hot water for each cut. Bars taste even better if made a day in advance.
