Instructions
- Whisk the ingredients: In a medium bowl, whisk together the coconut milk, chia seeds, and sweetener if using.
- Chill out: Cover the bowl and refrigerate for at least four hours or overnight.
- Make the blueberry-lemon compote: In a saucepan, combine blueberries, lemon juice, and maple syrup over medium heat and cook until the blueberries burst, about 5-7 minutes.
- Assemble and serve: Spoon the chia pudding into bowls and top with warm compote.
