Description

Delicious corn and zucchini fritters, perfectly crisp on the outside and fluffy on the inside, serve as a delightful appetizer or snack.


Ingredients

  • 2 cups grated zucchini
  • 1 cup corn kernels
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 2 green onions, chopped
  • 1 teaspoon baking powder
  • Salt and pepper, to taste
  • Oil for frying
  • Sour cream (for serving)
  • Lime juice (for dipping sauce)

Instructions

  1. Combine the grated zucchini, corn, flour, cornmeal, Parmesan cheese, eggs, green onions, baking powder, salt, and pepper in a large bowl.
  2. Heat about 1/4 inch of oil in a frying pan over medium heat.
  3. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  4. Fry for about 3-4 minutes on each side until golden brown and crisp.
  5. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  6. Mix sour cream with lime juice to taste for the dipping sauce.
  7. Serve the fritters warm with a generous dollop of the sour cream lime sauce for dipping.

Notes

For a healthier option, try using an air fryer. Ensure to salt and drain zucchini to avoid sogginess.
