- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (fresh or pickled)
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onions
- 1/4 cup fresh cilantro, chopped
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla chips or crackers for serving
Instructions
- In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Blend until smooth and creamy.
- Stir in the diced jalapeños, black beans, corn, red bell pepper, green onions, cilantro, garlic powder, and cumin. Season with salt and pepper to taste.
- Shape the mixture into a log using your hands and wrap in plastic wrap.
- Refrigerate the log for at least 2 hours to firm up.
- Before serving, remove from the fridge and roll in chopped cilantro or crushed tortilla chips for added flair.
- Serve with tortilla chips or crackers.
