Description

A vibrant and creamy cheese log featuring jalapeños, black beans, and cheddar cheese, perfect for parties and gatherings.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onions
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips or crackers for serving

Instructions

  1. In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Blend until smooth and creamy.
  2. Stir in the diced jalapeños, black beans, corn, red bell pepper, green onions, cilantro, garlic powder, and cumin. Season with salt and pepper to taste.
  3. Shape the mixture into a log using your hands and wrap in plastic wrap.
  4. Refrigerate the log for at least 2 hours to firm up.
  5. Before serving, remove from the fridge and roll in chopped cilantro or crushed tortilla chips for added flair.
  6. Serve with tortilla chips or crackers.
