Description

Delightful cowboy cookies blend crunchy edges and a chewy center with rich chocolate chips and a touch of coconut, perfect for any occasion.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, and salt in a separate bowl.
  5. Gradually blend this dry mixture into the creamed mixture.
  6. Fold in the rolled oats, chocolate chips, and shredded coconut.
  7. Drop large spoonfuls of the batter onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks.

Notes
