Description

Delicious sweet potato boats filled with flavorful taco-seasoned ground turkey and creamy cottage cheese, topped with melty cheese and fresh herbs.


Ingredients

  • 2 medium sweet potatoes
  • 1 pound ground turkey
  • 1 cup cottage cheese
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly, then pierce them several times with a fork.
  3. Place sweet potatoes on a baking sheet and bake for about 45 minutes, or until tender.
  4. Heat olive oil in a skillet over medium heat. Add turkey, taco seasoning, salt, and pepper.
  5. Cook until turkey is browned, about 7-10 minutes.
  6. Cut the baked sweet potatoes in half lengthwise and scoop out some flesh.
  7. Mix the scooped sweet potato flesh with cottage cheese and half of the shredded cheese.
  8. Fill each sweet potato half with turkey mixture and top with remaining cheese.
  9. Return to the oven for an additional 10 minutes, until cheese is bubbly.
  10. Garnish with chopped cilantro or green onions before serving.

Notes

Feel free to customize by adding black beans or corn to the turkey mixture for extra nutrition.
