- 2 medium sweet potatoes
- 1 pound ground turkey
- 1 cup cottage cheese
- 1 tablespoon taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, then pierce them several times with a fork.
- Place sweet potatoes on a baking sheet and bake for about 45 minutes, or until tender.
- Heat olive oil in a skillet over medium heat. Add turkey, taco seasoning, salt, and pepper.
- Cook until turkey is browned, about 7-10 minutes.
- Cut the baked sweet potatoes in half lengthwise and scoop out some flesh.
- Mix the scooped sweet potato flesh with cottage cheese and half of the shredded cheese.
- Fill each sweet potato half with turkey mixture and top with remaining cheese.
- Return to the oven for an additional 10 minutes, until cheese is bubbly.
- Garnish with chopped cilantro or green onions before serving.
Notes
Feel free to customize by adding black beans or corn to the turkey mixture for extra nutrition.
