- 1 cup orzo pasta
- 2 cups creamed corn
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the skillet: In a large skillet, heat the olive oil over medium heat until shimmering.
- Cook the shrimp: Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook for about 2-3 minutes until pink. Remove and set aside.
- Toast the orzo: In the same skillet, add the orzo and stir for a couple of minutes.
- Bring to a boil: Pour in the vegetable broth and bring to a boil.
- Add creamed corn: Stir in the creamed corn and mix well.
- Cook until al dente: Continue cooking for 10-12 minutes until orzo is al dente.
- Combine with shrimp: Gently stir the shrimp back into the orzo.
- Season to taste: Adjust seasoning with salt and pepper.
- Serve and garnish: Remove from heat, sprinkle with parsley, and serve warm.
Notes
For added spice, consider adding sliced jalapeños or hot sauce before serving.
