Description

A vibrant and comforting dish featuring succulent shrimp and creamy orzo, infused with Cajun spices.


Ingredients

  • 1 cup orzo pasta
  • 2 cups creamed corn
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Cook the shrimp: Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook for about 2-3 minutes until pink. Remove and set aside.
  3. Toast the orzo: In the same skillet, add the orzo and stir for a couple of minutes.
  4. Bring to a boil: Pour in the vegetable broth and bring to a boil.
  5. Add creamed corn: Stir in the creamed corn and mix well.
  6. Cook until al dente: Continue cooking for 10-12 minutes until orzo is al dente.
  7. Combine with shrimp: Gently stir the shrimp back into the orzo.
  8. Season to taste: Adjust seasoning with salt and pepper.
  9. Serve and garnish: Remove from heat, sprinkle with parsley, and serve warm.

Notes

For added spice, consider adding sliced jalapeños or hot sauce before serving.
