- 1 cup orzo pasta
- 2 cups creamed corn
- 1 pound shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Sizzle the olive oil in a large skillet over medium heat until it shimmers.
- Cook the shrimp with Cajun seasoning for about 3-5 minutes until they turn pink and opaque. Remove and set aside.
- Prepare the orzo by adding it and the chicken broth to the skillet, bringing to a boil.
- Simmer for around 10 minutes until the orzo is tender and the liquid is mostly absorbed.
- Bring everything together by stirring in the creamy corn and reserved shrimp, mixing until heated through.
- Season with salt and pepper, and garnish with chopped parsley before serving.
Notes
You can prepare creamed corn and season shrimp ahead of time for easier assembly. Consider adding hot sauce for extra spice.
