- 2 chicken breasts, diced
- 1 cup long-grain rice
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Stir in the chopped onion and minced garlic, cooking for 3-4 minutes until softened.
- Sprinkle the Cajun seasoning over the mixture and stir well.
- Pour in the rice and chicken broth, mixing gently.
- Raise the heat until boiling, then reduce and cover to simmer for 15-20 minutes.
- Stir in the heavy cream, seasoning with salt and pepper to taste.
- Garnish with freshly chopped parsley before serving.
Notes
Make-ahead: Pre-chop chicken and vegetables. Can substitute with plant-based protein. Adjust cooking time if using brown rice.
