Description

A one-pan dish of tender chicken and fluffy rice enveloped in a creamy Cajun sauce, perfect for any gathering.


Ingredients

  • 2 chicken breasts, diced
  • 1 cup long-grain rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic, cooking for 3-4 minutes until softened.
  4. Sprinkle the Cajun seasoning over the mixture and stir well.
  5. Pour in the rice and chicken broth, mixing gently.
  6. Raise the heat until boiling, then reduce and cover to simmer for 15-20 minutes.
  7. Stir in the heavy cream, seasoning with salt and pepper to taste.
  8. Garnish with freshly chopped parsley before serving.

Notes

Make-ahead: Pre-chop chicken and vegetables. Can substitute with plant-based protein. Adjust cooking time if using brown rice.
