Description

A vibrant and creamy Mexican corn dip that combines sweet corn, tangy cream cheese, and fresh cilantro for a tantalizing appetizer.

Ingredients

Scale
  • 1 can of corn, drained
  • 1 cup of cream cheese, softened
  • 1/2 cup of sour cream
  • 1/2 cup of mayonnaise
  • 1 teaspoon of lime juice
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro
  • 1/2 cup of diced red onion
  • Tortilla chips or fresh veggies for serving

Instructions

  1. Start by grabbing a large mixing bowl. Add the softened cream cheese, sour cream, and mayonnaise together.
  2. Using an electric mixer or whisk, blend these three key ingredients until you achieve a luxuriously smooth and creamy base.
  3. Next, gently fold in the drained corn, lime juice, chili powder, and garlic powder. Sprinkle in salt and pepper to taste.
  4. Once combined, carefully fold in the chopped cilantro and diced red onion.
  5. Chill the dip in the refrigerator for at least 30 minutes before serving.

Notes

This dip can be prepared a day in advance to allow flavors to deepen. For a warm version, bake in the oven until bubbling. Adjust the spiciness to preference by adding jalapeƱos.
