- 2 cups fresh spinach
- 1 cup cherry tomatoes
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken thighs, seasoning them lightly with salt and pepper. Cook for about 5-7 minutes on each side until browned.
- Remove the chicken from the skillet and set aside on a plate.
- Add the minced garlic to the skillet and sauté for about 30 seconds.
- Cook the cherry tomatoes until they start to soften, around 3-4 minutes.
- Stir in the spinach until wilted.
- Pour in the chicken broth and heavy cream, followed by Italian seasoning. Stir well.
- Return the chicken to the skillet and let it simmer for 5-7 minutes until cooked through.
- Season with salt and pepper to taste and serve warm.
