- 2 chicken breasts, boneless
- 1 cup breadcrumbs (Panko or regular)
- 1/2 cup all-purpose flour
- 1 egg, beaten
- Salt and pepper to taste
- 4 sandwich buns (brioche or ciabatta)
- Lettuce (iceberg or romaine)
- Tomato slices
- Mayo or your favorite sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts generously with salt and pepper on both sides.
- Set up your breading station with flour in one bowl, beaten egg in the second, and breadcrumbs in the third.
- Dredge each chicken breast in flour, dip into the egg, and press into the breadcrumbs.
- Line a baking sheet with parchment paper and place the chicken on it.
- Bake for about 20 minutes, flipping halfway until the chicken is cooked through and golden brown.
- Toast the sandwich buns until lightly golden.
- Assemble the sandwiches with a crispy chicken breast on each bun, topped with lettuce, tomato slices, and mayo.
