- 1 cup breadcrumbs
- 2 jalapeños, finely chopped
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 eggs, beaten
- Oil for frying
Instructions
- Preheat the oil: In a heavy-bottomed frying pan, add about a half-inch of oil and preheat over medium heat.
- Prepare the breadcrumb mixture: In a medium bowl, combine breadcrumbs, finely chopped jalapeños, cayenne pepper, garlic powder, onion powder, salt, and pepper.
- Coat the chicken: Dip each chicken thigh in the beaten eggs, then transfer to the breadcrumb mixture, pressing to adhere.
- Fry the chicken: Gently place the coated thighs in the hot oil and fry until golden brown, about 6-7 minutes on each side.
- Drain and serve: Remove the chicken from the oil and allow it to rest on paper towels to absorb excess oil. Serve hot.
Notes
For a lighter version, consider using an air fryer. You can coat the chicken ahead of time and refrigerate for up to a day before frying.
