Description

Delicious crispy zucchini cakes bursting with feta flavor, served with a spicy harissa tzatziki.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Oil for frying
  • 1 cup Greek yogurt
  • 2 tablespoons harissa paste
  • 1 tablespoon lemon juice

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out the excess moisture thoroughly.
  2. Combine the grated zucchini, crumbled feta cheese, breadcrumbs, eggs, chopped parsley, minced garlic, salt, and pepper in a large mixing bowl.
  3. Form the mixture into small, even cakes about the size of your palm.
  4. Heat enough oil in a skillet over medium heat to cover the bottom. Carefully place the cakes in the skillet, frying until golden brown, about 3-4 minutes on each side.
  5. Prepare the harissa tzatziki by mixing Greek yogurt, harissa paste, and lemon juice until smooth.
  6. Serve the cakes hot with the harissa tzatziki on the side.

Notes

Ensure to drain excess moisture from zucchini to avoid soggy cakes. Can be made ahead and refrigerated.
