Description

A hearty and comforting Crockpot Goulash made with ground beef, pasta, and vegetables slow-cooked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups elbow macaroni
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until rich and deep brown. Add the chopped onion and minced garlic, sautéing until softened.
  2. Drain any excess fat and transfer the cooked beef mixture into the Crockpot.
  3. Add the chopped bell pepper, elbow macaroni, diced tomatoes, tomato sauce, and beef broth. Sprinkle in the Italian seasoning, and season with salt and pepper.
  4. Stir everything until combined, allowing the flavors to mingle.
  5. Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve warm and enjoy the comforting flavors with your family.

Notes

Make-ahead tip: Prepare the goulash the night before and refrigerate it. The next morning, simply reheat in the crockpot. Feel free to substitute ground beef with turkey or chicken, or use gluten-free pasta.
